Documenting HACCP

Self-monitoring under EU Regulation 852/2004 runs in HACCP — instead of on a clipboard. The area works on kitchen tablets (large touch targets).

Creating checkpoints

  1. Open HACCP and switch to the Verwaltung (administration) tab.

  2. Create a checkpoint — for example "Cold store 1", "Serving counter" or a visual inspection.

  3. Choose the type: temperature (with limits) or check (passed / failed).

  4. For temperatures, define the permitted range. Values outside it count as a deviation automatically.

Only create what you genuinely check on a regular basis. A short list kept completely is worth more to an inspector than a long one with gaps.

Recording readings

  1. Open the Heute (today) tab — it lists the checkpoints due today.

  2. Enter the value and save. The rating (OK / warning / deviation) is derived automatically from the limits.

  3. For a deviation, the corrective action is mandatory: what was done? Without it the case counts as open.

Adding corrective actions later

Connected measuring devices report values on their own; deviations from them appear at the top as open device deviations. Use "add corrective action" to supply the justification. The original reading is not changed — a linked follow-up entry is created instead. That is deliberate: a reading altered after the fact would no longer be evidence.

Exporting evidence for the authority

  1. Open the Verlauf (history) tab and select the period.

  2. PDF to present to the authority, or CSV for further processing.

The export contains all readings of the period including rating, documented corrective actions and the person who recorded them. Every export is logged.

HACCP is included in every plan — the documentation is required by law and therefore not placed behind a surcharge.
